The Christmas Season is fast approaching – here in Germany there is no escaping it. Most of the gardens and homes are decked with lights, the Christmas Markets are in full swing and the shops are full of food you only seem to see at this time of year.

If you enjoy eating cake, but don't want to go to the trouble of making a Christmas cake, why not try this recipe for Sticky Marmalade Tea Loaf – it's easy to make, has the warmth of ginger and spice and goes really well with a cup of tea, or two.

Sticky Marmalade Tea Loaf

Ingredients

5 oz Chunky Marmalade (3rd of 454g jar)

6 oz Butter

6 oz Muscovado Sugar

3 x Eggs, beaten

8 oz Self-raising Flour

Half tsp Baking Powder

2 tsp Ginger

1 tsp Mixed Spice

100g Pecan Nuts

Method

Oven 180/fan 160 Grease & line 2lb loaf tin

Set 1 tbsp marmalade aside in a pan for glazing.

Blend marmalade,butter,sugar,eggs,flour, baking powder & spices until smooth & light. Stir in 3/4 pecans.

Put mix in tin & smooth top.Sprinkle on reserved pecans.

Bake for 1-1.15 hours, cover loosely with foil after 40 mins of cooking time. Cool on rack, heat glaze - spread over cake while still warm.
